Jam-Filled Almond Cookie Recipe (Gluten Free + Vegan)

Satisfy your sweet-tooth with these pleasing cookies that are perfect with a cup of tea or a coffee. The best part? These cookies taste profile changes drastically based on the type of jam used - so go wild!

The Recipe

Time allotment

Prep Time: 15 minutes

Cooking time: 10-12 minutes

Total Time: 25-27 minutes

Yield: 12-16 biscuits

Cooking Utensils

  • Spatula

  • 2 bowls

  • Whisk - OR - Handheld/ Upright mixer

  • Measuring cups

  • Measuring spoons


Ingredients

DRY INGREDIENTS

  • 2 cups (192g) almond flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 1/2 cup (125 ml) jam

    • Any jam will do, but I recommend strawberry, raspberry, or apricot

  • Cooking spray - OR - parchment paper

WET INGREDIENTS

  • 1/4 (55g) cup butter

    • *Vegan alternative 1: 1/4 (55g) cup vegan butter

    • *Vegan alternative 2: 1/4 (62.5ml) avocado oil

  • 1 tbsp brown sugar

  • 2 tsp vanilla extract

  • 2 tsp honey

    • *Vegan alternative: maple syrup

Instructions

  1. In one bowl, add 2 tbsp brown sugar, *2 tbsp honey (vegan alternative: 2 tbsp maple syrup), 2 tbsp vanilla extract, and *1/4 cup (55g) butter (vegan alternative: 1/4 cup (55g) vegan butter - OR - 1/4 cup (62.5ml) avocado oil)

  2. Mix all the ingredients together with a whisk/ handheld mixer

  3. In a separate bowl, add 2 cups (192g) almond flour, 1 tsp baking powder, and 1 tsp salt

  4. Mix all the ingredients together with a spatula

  5. While stirring, gradually pour small sections of the almond flour mixture into the wet mixture until everything is well combined

  6. Line a baking pan with either parchment paper - OR - cooking. spray

  7. Place dollar-sized balls of dough on the pan

  8. Press a teaspoon into the middle of the cookie and make an indent

  9. Add a 1/2 tsp (or 1 tsp… I ain’t judging) into the indent

  10. Bake the biscuits in the oven at 350°F (180°C) for 12-15 minutes

    1. They will be golden brown and flattened when finished

  11. Allow the biscuits to cool for a minimum of 15 minutes

  12. Enjoy!

Helpful Tips:

  • For step #8, do not make the indent too deep - your cookie naturally flattens when baking, so this could lead to spillage!
