Edible Fudge Cookie Dough Recipe (Gluten Free + Vegan Option)

Who doesn’t like chomping down on cookie dough?

Although I technically shouldn’t do it, I can’t help myself when faced when making cookies. - the dough is the best part! In order to satisfy my cravings in a healthy way, I concocted this eggless recipe as the perfect substitute! Trust me - it tastes like the real thing!

The Recipe

Time allotment

Prep Time: 15 minutes

Cooking time: None!

Total Time: 15 minutes

Yield: 18-22 edible fudge cookie balls

Cooking Utensils

  • Two bowls

  • Spatula

  • Whisk - OR - Handheld Mixer (to beat eggs)

  • Measuring cups

  • Measuring spoons


Ingredients

  • 1 1/2 cups (192g) flour

    • Make sure to heat up/ microwave the flour on high for 1 min. 15 secs. - 1 min. 30 secs before eating it

    • I used Gluten Free Robin Hood All Purpose Flour Blend

  • 3/4 cups (150g) brown sugar

  • 1/2 cup (115g) granulated sugar

  • *1 cup (227g) salted butter

    • *Vegan substitute: 1 cup vegan butter - OR - 1 cup (250ml) avocado oil - OR - 1 cup apple sauce

  • 1/2 cup (50g) cocoa powder

    • I used Viva Naturals Organic Cocoa Powder (Vegan)

  • 2 tsp vanilla extract

  • *1 tbsp milk

    • *Vegan substitute: 1 tbsp oat milk / almond milk

  • 1 tsp salt

  • *1/2 cup chocolate chips

    • *Vegan substitute: 1/2 cup vegan dark chocolate chips


Instructions

  1. In a bowl, add 3/4 cup (150g) brown sugar, 1/2 (115g) granulated sugar, 2 tsp vanilla extract, *1 cup (227g) butter (*or vegan substitutes mentioned above), *1 tbsp milk (*or vegan substitutes mentioned above)

  2. With a whisk or a handheld mixer, mix all of the ingredients together until well blended

  3. Microwave/ Heat up 1 1/2 cup (192g) flour on high heat for 1 min. 15 secs. - 1 min. 30 secs

  4. In a separate bowl, add the heated 1 1/2 cup (192g) flour, 1/2 cup cocoa powder (50g), and 1 tsp salt

  5. Mix all of the ingredients together with a spatula

  6. Slowly mix 1/4 portions of the dry ingredients (flour and cocoa powder mixture) into the wet ingredients

  7. Gently stir all of the ingredients together until just blended

    1. Be careful not to over stir!

  8. Fold 1/2 cup (90g) of chocolate chips into the mixture

  9. Take out golf ball sized portions of dough, and roll them together between your palms

  10. Set them aside on a plate, and allow the balls to harden for a minimum of 15 minutes before digging in

  11. Enjoy!

Helpful Tips:

  • To stop the dough from sticking to your palms, wet your hands before doing it

  • If you don’t think you’ll be able to finish all of the cookie dough balls you’ve made, put them into an airtight container and store them int the freezer. When you crave some, remove the container 30 minutes before eating and they’ll be good to go!
