Healthy No-Bake Maple Oatmeal Breakfast Bars Recipe (Vegan + Gluten Free + Refined Sugar Free)

If you want a healthy but delicious breakfast options, this is a surefire hit! Minimal prep, this is a great option for those busy mornings when you wanna just grab something and go. It’s super customizable, so you can literally make it to your heart’s content!


The Recipe

Time allotment

Prep Time: 15 minutes

Freeze Time: 30 minutes

Total Time: 45 minutes

Yield: 8-10 bars (depending on cuts)

Cooking Utensils

  • One big bowl

  • One big spoon

  • 8x8 inch pan

  • Measuring cups + spoons

  • Parchment paper

Ingredients

Wet Ingredients

  • 1 1/2 cup (120g) oats

    • If celiac, ensure they are gluten free oats

  • 1 cup (250g) peanut butter/ almond butter

  • 1/2 cup (150g) maple syrup

  • 1 tsp alcohol-free vanilla

  • 2 tsp cinnamon

  • Pinch of salt

  • Optional Add-Ins: 1/4 cup (25g) cranberries, 1/4 cup (30g) chopped pecans, 1/4 cup (40g) chopped dark chocolate chips


Instructions

  1. Line an 8x8 inch pan with parchment paper

  2. In a large bowl, mix all the ingredients, including optional add-ins, together

  3. Transfer the mixture to the 8x8 inch pan

  4. Freeze for a minimum of 30 minutes

  5. Cut the mixture into desired portions, and… enjoy!
