Dulce de Leche Cookies (Gluten Free)

Anyone with tastebuds can agree that Dulce de Leche is a TOP TIER ingredient. As someone who is slightly obsessed with creating cookie recipes, it was imperative that I come up with some that showcased said ingredient.

Now, normally I would add more Dulce de Leche in each cookie than what is pictured, but I only had half a jar on hand when I baked this particular batch! You are welcome to add as much dulce de leche to your cookie as desired.

The Recipe

Time allotment

Prep Time: 20-30 minutes

Cooking time: 10 minutes

Total Time: 30-40 minutes

Yield: 16-18 gluten free Dulce de Leche cookies

Cooking Utensils

  • Two bowls

  • Spatula

  • Whisk - OR - Handheld Mixer

  • Measuring cups

  • Measuring spoons


Ingredients

  • 1 cup (225g) unsalted butter

  • 1 cup (200g) brown sugar

  • 1 tsp vanilla extract

  • 2 eggs

  • 2 1/2 cups (320g) flour

    • If using Gluten Free flour, add 1/2 tsp xanthan gum

    • I used Gluten Free Robin Hood All Purpose Flour Blend and Bob’s Red Mill Xanthan Gum

  • 1 cup (112g) almond flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup (150g) dulce de leche

  • Optional coating: 1/2 cup (100g) granulated sugar

Instructions

  1. Preheat the oven at 350°F (180°C)

  2. In one bowl, cream together 1 cup (225g) unsalted butter, 1 cup (200g) brown sugar, and 1 tsp vanilla extract (these are the wet ingredients)

  3. Add 2 eggs, and mix again

  4. In a separate bowl, mix together 2 1/2 cups (320g) flour, 1 cup (112g) almond flour, ( 1 tsp baking powder, and 1/4 tsp salt (these are the dry ingredients)

  5. Slowly pour 1/4 portions of the dry ingredients into the wet ingredients, until fully combined

  6. Gently stir all of the ingredients together until just blended

  7. Line a baking pan with either parchment paper - OR - cooking spray

  8. Take out golf ball sized portions of dough, roll them together between your palms, and place on pan

  9. With your thumb, carefully make an indent in each ball of dough, and add a dollop of dulce de leche. Fold the dough back over the dulce de leche to re-form an even cookie

  10. (Optional) If desired, sprinkle each cookie with some granulated sugar for some added texture

  11. Bake the cookies in the oven at 350°F (180°C) for 12 minutes

  12. Take the cookies out of the oven, and allow the biscuits to cool for a minimum of 15 minutes before bitting into them

  13. Enjoy!
