Coffee Chocolate Chip Cookies Recipe (Gluten Free Option)

These coffee chocolate chip cookies are the ultimate buzzed up desser.


The Recipe

Baking time: 15-16 minutes

Total Time: 30-31 minutes

Yield: 24-28 cookies

  • Upright mixer - OR - handheld mixer

  • Measuring cups + spoons

  • Baking tray

  • Cooking spray/ parchment paper

Ingredients

  • 3/4 cup (115g) butter

  • 1/2 cup (150g) brown sugar

  • 3/4 cup (100g) white sugar

  • 1 tsp vanilla extract

  • 2 eggs

  • 2 1/2 cups (300g) preferred flour

    • If using gluten-free flour, add 1 tsp xanthan gum

  • 1 1/2 cups (180g) almond flour

  • 2 tbsp instant coffee powder

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 dark chocolate bar, cut up

Instructions

  1. Preheat oven at 350°F (180°C)

  2. In a large bowl, cream together 3/4 cup (115g) butter, 1/2 cups (100g) brown sugar, 3/4 cup (150g) white sugar, and 1 tsp vanilla.

  3. Beat in 2 eggs until mixture is light and fluffy

  4. Add in 2 1/2 cups (300g) flour, 1 1/2 cup (180g) almond flour, 2 tbsp instant coffee powder, 1 tsp baking soda, and 1 tsp baking powder

  5. Mix together until well combined

  6. Add in cut-up chocolate pieces

  7. Gently stir all of the ingredients together until just blended

  8. Line a baking tray with parchment paper - OR - cooking spray

  9. Create golfball sized portions of dough, and place evenly onto baking tray

  10. Bake the biscuits in the oven at 350°F (180°C) for 9-11 minutes

  11. Allow the biscuits to cool for a minimum of 15 minutes

  12. Dig in and enjoy!
