Hearty and Healthy Lemon Coleslaw

Nothing is more perfect than a hearty (yet healthy) coleslaw!

This coleslaw recipe is the perfect side dish, or filling for burgers and wraps. Despite the mayonnaise, it still tastes light and refreshing!

The key to this dish is using fresh ingredients, and taking your time to finely chop the base ingredients. If you do that, I guarantee you will love this dish! Let’s get into it!

The Recipe

Time allotment

Chopping Time: 10 minutes

Sauce Time: 5-10 minutes

Total Time: <30 minutes

Yield: 1 large bowl (~3 cups) of coleslaw

Cooking Utensils

  • One large bowl

  • One small bowl

  • Microplane (for ginger)

  • Measuring cups

  • Measuring spoons


Ingredients

Base Ingredients

  • 1 cup (~50g) carrots, finely chopped

  • 1 cup (~90g) white cabbage, finely chopped

  • 1 cup (~180g) red cabbage, finely chopped

  • 1/2 cup (~60g) radish, finely chopped

Sauce Ingredients

  • 2 tbsp mayonnaise

  • 1 tbsp balsamic vingear

  • 2 tbsp seedy mustard

  • Half a lemon juice

  • 1 tsp coriander seed

  • 1 tsp white pepper

  • 1 tsp salt


Instructions

  1. In the large bowl, mix together the finely chopped 1 cup (~50g) carrots, 1 cup (~90g) white cabbage, and 2 cups (~180g) red cabbage (base ingredients)

  2. In the small bowl, stir together 2 tbsp mayonnaise, 1 tbsp balsamic vinegar, 1 tsp coriander seed, 1 tsp white pepper, and 1 tsp salt (sauce ingredients)

  3. In the same small bowl, squeeze in the juice of half a lemon

  4. Pour the sauce ingredient mixture into the base ingredients mixture

  5. Stir everything together, then enjoy!
