Ube White Chocolate Cookies Recipe - (Gluten Free)

Ube crinkles (also called purple yam crinkles) are a very sweet and satisfying cookie that originates from the Philippines.

These cookies are rolled in icing sugar, which give them their telltale “crinkle”. The key making these really pop is ube halaya (mashed purple yam), which can be found in the refrigerated section of most Filipino grocery stores. The ube helps balance out the sweetness, making this a unique cookie that is sure to please! Enjoy 💜

The Recipe

Time allotment

Prep Time: 15-20 minutes

Cooking time: 9-10 minutes

Total Time: 24-30 minutes

Yield: 22-24 gluten free ube white chocolate cookies

Cooking Utensils

  • Spatula

  • 2 large bowls

  • Whisk - OR - Upright mixer

  • Measuring cups

  • Measuring spoons


Ingredients

  • 1/2 cup (113g) salted butter

  • 1/4 cup (50g) granulated sugar

  • 1/4 cup (50g) brown sugar

  • 1/2 cup (160g) ube halaya

  • 1 tsp vanilla

  • 1 egg

  • 2 1/2 cups (320g) flour

    • If using gluten free flour without xanthan gum, add 1 tsp xanthan gum

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 cup (175g) white chocolate chips

  • *Optional: 1 tsp ube extract


Instructions

  1. Preheat the oven for 350°F (180°C)

  2. In one bowl, mix together 1/4 cup (50g) granulated sugar, 1/4 cup (50g) brown sugar, 1/2 cup (113g) butter, 1 tsp vanilla extract, [Optional] 1 tsp ube extract (these are the wet ingredients)

  3. Add in 1 egg, and mix well

  4. Stir in 1/2 cup (160g) ube halaya

  5. In another bowl, mix together 2 1/2 cups (320g) flour, 1 tsp baking powder, 1 tsp baking soda, and 1 tsp salt (these are the dry ingredients)

  6. Slowly pour 1/4 portions of the dry ingredients into the wet ingredients, until fully combined

  7. Gently stir all of the ingredients together until just blended

  8. Add in 1 cup (175g) white chocolate chips, and briefly stir

  9. Grease a baking pan with cooking spray - OR - put parchment paper down on a baking pan

  10. Take out golf ball sized portions of dough, and roll them together between your palms to make a circular shape

  11. Place each ball of dough onto the baking pan

  12. Bake the ube crinkle cookies in the oven at 350°F (180°C) for 9-10 minutes

  13. Take them out of the oven, and let them cool for at least 20 minutes before consuming (or don’t… no judgement)
