Vegan Dark Chocolate Oatmeal Molasses Cookies (+ Gluten Free Option)

If you’re not into molasses, you’re missing out, especially if you’re a fan of oatmeal. This is the most perfect comforting cookie recipe, which uses no animal products whatsoever!

They can be made in under 30 minutes, so what’s your excuse?!

Yield: ~22 Vegan Dark Chocolate Oatmeal Molasses Cookies

Cooking Utensils

  • Two bowls

  • Spatula

  • Whisk - OR - Handheld / Upright Mixer

  • Measuring cups

  • Measuring spoons


Ingredients

  • 1 cup (227g) vegan butter

  • 1 3/4 cup (350g) brown sugar

  • 1 tbsp Bob’s Red Mill Egg Replacer (+ 2 tbsp water) - OR - 1/4 (61.2g) cup of unsweetened apple sauce

    • Equivalent of 1 egg

  • 1 tsp ginger

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/4 cup molasses

  • 2 cups (244g) preferred baking flour

    • If using gluten free flour without xanthan gum, add 1 tsp xanthan gum

    • I used 2 cups (250g) Bob’s Red Mill 1-to-1 Baking Flour, no extra xanthan gum

  • 1 1/2 (120g) cup oatmeal

  • 1 tsp salt

  • 1 tsp baking soda

  • 1/2 tsp xanthan gum

  • 1/2 tsp baking powder

  • 1 cup vegan dark chocolate

    • I used Camino vegan dark chocolate bar


Instructions

  1. Preheat oven to 350°F (180°C)

  2. In a bowl, cream together 1 cup (227g) vegan butter, 1 3/4 cup (350g) brown sugar, 1 tsp vanilla extract

  3. Mix in 1 tbsp egg egg replacer (or 1/4 (61.2g) cup apple sauce), and mix again

  4. Add 1/4 cup molasses, and mix again

  5. In a separate bowl, mix together 2 cups (244g) flour, 1 1/2 (120g) cup oatmeal, 1 tsp salt, 1 tsp ginger, 1 tsp cinnamon, 1 tsp baking powder, and 1 tsp baking soda

  6. Slowly pour and stir 1/4 portions of the dry ingredients into the wet ingredients, until fully combined

  7. Fold in 1 cup vegan dark chocolate

  8. Line a baking pan with either parchment paper - OR - cooking spray

  9. Place golf ball sized portions of dough on the pan

  10. Bake the cookies in the oven at 350°F (180°C) for 10-12 minutes

  11. Allow the cookies to cool for a minimum of 15 minutes before munching

  12. Enjoy!
