Vegan Oatmeal Granola Cookies - (Gluten Free)

Granola is yummy, cookies are yummy. These are yummy.

The Recipe

Time allotment

Prep Time: 15-20 minutes

Cooking time: 10-12 minutes

Total Time: 25-32 minutes

Yield: 20-22 cookies

Cooking Utensils

  • Two bowls

  • Spatula

  • Whisk - OR - Handheld / Upright Mixer

  • Measuring cups

  • Measuring spoons


Ingredients

  • 1 cup (227g) vegan butter

  • 1 1/2 cup (260g) brown sugar

  • 1/4 cup maple syrup

  • 1 tbsp Bob’s Red Mill Egg Replacer (+ 2 tbsp water) - OR - 1/4 (61.2g) cup of unsweetened apple sauce

    • Equivalent of 1 egg

  • 1 tsp vanilla extract

  • 1/4 cup molasses

  • 1 tsp baking soda

  • 1 1/2 cup (180g) preferred baking flour

    • If using gluten free flour without xathan gum, add 1 tsp xanthan gum

  • 2 cups (180g) rolled oats

  • 1 tsp salt

  • 1/4 cup vegan dark chocolate

  • 1/4 cup dried cranberries

  • 1/4 cup sliced almonds

  • 1/4 cup sunflower seeds


Instructions

  1. Preheat oven to 350°F (180°C)

  2. In a bowl, cream together 1 cup (227g) vegan butter, 1 1/2 cup (260g) brown sugar, 1/4 cup maple syrup, and 1 tsp vanilla extract

  3. Mix in 1 tbsp egg replacer (or 1/4 (61.2g) cup apple sauce)

  4. Mix in 1/4 cup molasses

  5. In a separate bowl, mix together 1 1/2 cups (180g) flour, 2 cups (180g) rolled oats, 1 tsp salt, and 1 tsp baking soda

  6. Slowly pour and stir 1/4 portions of the dry ingredients into the wet ingredients, until fully combined

  7. Fold in 1/4 cup vegan dark chocolate chips, 1/4 cup dried cranberries, 1/4 cup sliced almonds, and 1/4 cup sunflower seeds

  8. Line a baking pan with either parchment paper - OR - cooking spray

  9. Place golf ball sized portions of dough on the pan

  10. Bake the cookies in the oven at 350°F (180°C) for 10-12 minutes

  11. Allow the cookies to cool for a minimum of 15 minutes before munching

  12. Enjoy!
