Vegan Oatmeal Granola Cookies - (Gluten Free)
Granola is yummy, cookies are yummy. These are yummy.

The Recipe

Cooking time: 10-12 minutes
Total Time: 25-32 minutes
Yield: 20-22 cookies
Cooking Utensils
- Two bowls 
- Spatula 
- Whisk - OR - Handheld / Upright Mixer 
- Measuring cups 
- Measuring spoons 
Ingredients
- 1 cup (227g) vegan butter 
- 1 1/2 cup (260g) brown sugar 
- 1/4 cup maple syrup 
- 1 tbsp Bob’s Red Mill Egg Replacer (+ 2 tbsp water) - OR - 1/4 (61.2g) cup of unsweetened apple sauce - Equivalent of 1 egg 
 
- 1 tsp vanilla extract 
- 1/4 cup molasses 
- 1 tsp baking soda 
- 1 1/2 cup (180g) preferred baking flour - If using gluten free flour without xathan gum, add 1 tsp xanthan gum 
 
- 2 cups (180g) rolled oats 
- 1 tsp salt 
- 1/4 cup vegan dark chocolate 
- 1/4 cup dried cranberries 
- 1/4 cup sliced almonds 
- 1/4 cup sunflower seeds 
Instructions
- Preheat oven to 350°F (180°C) 
- In a bowl, cream together 1 cup (227g) vegan butter, 1 1/2 cup (260g) brown sugar, 1/4 cup maple syrup, and 1 tsp vanilla extract 
- Mix in 1 tbsp egg replacer (or 1/4 (61.2g) cup apple sauce) 
- Mix in 1/4 cup molasses 
- In a separate bowl, mix together 1 1/2 cups (180g) flour, 2 cups (180g) rolled oats, 1 tsp salt, and 1 tsp baking soda 
- Slowly pour and stir 1/4 portions of the dry ingredients into the wet ingredients, until fully combined 
- Fold in 1/4 cup vegan dark chocolate chips, 1/4 cup dried cranberries, 1/4 cup sliced almonds, and 1/4 cup sunflower seeds 
- Line a baking pan with either parchment paper - OR - cooking spray 
- Place golf ball sized portions of dough on the pan 
- Bake the cookies in the oven at 350°F (180°C) for 10-12 minutes 
- Allow the cookies to cool for a minimum of 15 minutes before munching
