Vegan Peanut Butter Chocolate Chip Cookies Recipe (+ Gluten Free Option)

The Recipe

Time allotment

Prep Time: 15 minutes

Baking time: 10-11 minutes

Total Time: <30 minutes

Yield: 20-22 vegan peanut butter chocolate chip cookies

Cooking Utensils

  • One big bowl

  • Upright mixer - OR - handheld mixer

  • Measuring cups + spoons

  • Baking tray

  • Cooking spray/ parchment paper

Ingredients

  • 1 cup (250g) vegan butter

  • 1 tsp vanilla extract

  • 1/2 cup (115g) peanut butter

  • 1/2 cup (100g) brown sugar

  • 1/2 cup (100g) white sugar

  • 1 1/2 tbsp (+3 tbsp water) Bob’s Red Mill Egg Replacer - OR - 1/4 cups (122g) unsweetened applesauce

    • Equivalent of 1 egg

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 1/2 cup (180g) preferred baking flour

    • If using gluten-free flour without xanthan gum, add 1 tsp xanthan gum

  • 1 vegan dark chocolate bar, cut up

    • I used Camino vegan dark chocolate bar


Instructions

  1. Preheat oven at 350°F (180°C)

  2. In a large bowl, cream together 1 cup (250g) vegan butter, 1/2 cups (100g) brown sugar, 1/2 cup (100g) white sugar, and 1 tsp vanilla.

  3. Beat in 1 1/2 tbsp (+3 tbsp water) Bob’s Red Mill Egg Replacer - OR - 1/4 cups (122g) unsweetened apple sauce

  4. Fold in 1/2 cup (115g) peanut butter

  5. Mix until combined in 1 1/2 cup (180g) preferred baking flour, 1/2 tsp salt, 1 tsp baking soda, and 1 tsp baking powder

  6. Add in cut-up dark chocolate pieces

  7. Line a baking tray with parchment paper - OR - cooking spray

  8. Create golfball sized portions of dough, and place evenly onto baking tray

  9. Bake the biscuits in the oven at 350°F (180°C) for 10-11 minutes

  10. Allow the biscuits to cool for a minimum of 15 minutes

  11. Enjoy!
