Chocolate Chunk Cookies Recipe (Gluten Free)

If you crave an elevated version of the chocolate chip cookie, then look no further!

These chocolate chunk cookies are the ultimate zhuzhed up dessert, and can be modified depending on what type of chocolate bar you choose to use. Personally, I go for Lindt, but you do you! 🍪💅


The Recipe

Time allotment

Prep Time: 15 minutes

Baking time: 15-16 minutes

Total Time: 30-31 minutes

Yield: 24-28 cookies

Cooking Utensils

  • Bowls

  • Upright mixer - OR - handheld mixer

  • Measuring cups + spoons

  • Baking tray

  • Cooking spray/ parchment paper

Ingredients

Wet Ingredients

  • 3/4 cup (115g) butter

  • 1 tsp vanilla extract

  • 3/4 cup (150g) brown sugar

  • 1/2 cup (100g) white sugar

  • 2 eggs

    • *Vegan substitute: 2 egg replacers

    • *Vegan substitute: 1/3 cup (80ml) applesauce - OR - 1/3 cup (80ml) avocado oil

Dry Ingredients

  • 2 1/2 (300g) cups baking flour

    • If using gluten-free flour without xanthan gum, add 1 tsp xanthan gum

  • 1 1/2 (180g) cups almond flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 2 milk chocolate bars, cut up

    • *Vegan substitute: 2 dairy-free dark chocolate bars, cut up

Instructions

  1. Preheat oven at 350°F (180°C)

  2. In a large bowl, add 3/4 cup (115g) butter (or vegan substitute), 3/4 cups (150g) brown sugar, 1/2 cup (100g) white sugar, and 1 tsp vanilla.

  3. Mix ingredients together until smooth

  4. Add 2 eggs (or vegan substitute)

  5. Mix ingredients together on high until well combined

  6. Add in 2 1/2 cups (300g) baking flour, 1 1/2 cup (180g) almond flour, 1 tsp baking soda, and 1 tsp baking powder

  7. Mix together until well combined

  8. Break apart and cut up 2 milk chocolate bars (or vegan substitute)

  9. Add in cut-up chocolate

  10. Gently stir all of the ingredients together until just blended

  11. Line a baking tray with parchment paper - OR - cooking spray

  12. Take golf ball sized portions of dough, and roll them together between your palms, then evenly space each ball onto baking tray

  13. Bake the biscuits in the oven at 350°F (180°C) for 15-16 minutes

  14. Allow the biscuits to cool for a minimum of 15 minutes
