Best Snickerdoodle Recipe (Gluten Free)

First things first: if you don’t know what a snickerdoodle is, let me elaborate for you.

A snickerdoodle is essentially a cookie rolled in cinnamon sugar before baking. Generally, they are made from a combination of butter, sugar, flour, and a pinch of salt. Supposedly, at their origin, they were German cookies named after “Schneckennudel” (German cinnamon rolls).

Whatever their roots may be, snickerdoodles are a delicious and soft cookie for those who like cinnamon. I came up with this gluten-free version that is perfect to enjoy during the cold winter months. Enjoy!

The Recipe

Time allotment

Prep Time: 15 minutes

Baking time: 12 minutes

Total Time: 27 minutes

Yield: 24-28 Snickerdoodles

Cooking Utensils

  • One big mixing bowl, one small bowl

  • Upright mixer - OR - handheld mixer

  • Measuring cups + spoons

  • Baking tray

  • Cooking spray/ parchment paper

Ingredients

Wet Ingredients

  • 1 cup (153g) unsalted butter

  • 1 cup (300g) brown sugar

  • 1 tsp vanilla extract

  • 2 eggs

Dry Ingredients

  • 2 (274g) cups baking flour

    • If using gluten-free flour without xanthan gum, add 1 tsp xanthan gum

  • 1 (112g) cup almond flour

  • 2 tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp baking powder

Rolling Ingredients

  • 3/4 cup (170g) cinnamon

  • 1/2 cup (100g) brown sugar

Instructions

  1. Preheat oven at 350°F (180°C)

  2. In a large bowl, add 1 cup (153g) unsalted butter, 1 cup (300g) brown sugar, and 1 tsp vanilla.

  3. Mix ingredients together until smooth

  4. Add 2 eggs

  5. Mix ingredients together on high until well combined

  6. Add in 2 (274g) cups baking flour, 1 cup (112g) almond flour, 1 tsp baking soda, 1 tsp baking powder, and 2 tsp cinnamon.

  7. Mix together until well combined

  8. Line a baking tray with parchment paper - OR - cooking spray

  9. In a small bowl, mix together 1/2 cup (100g) brown sugar and 3/4 cups (170g) cinnamon in a small bowl

  10. Take golf ball sized portions of dough, and roll them together between your palm

  11. Roll the balls of dough in the brown sugar and cinnamon mixture, and then evenly space each ball onto baking tray

  12. Sprinkle each cookie with an extra cinnamon if desired

  13. Bake the snickerdoodle cookies in the oven at 350°F (180°C) for 12 minutes

  14. Allow the snickerdoodles to cool for a minimum of 15 minutes

  15. Enjoy!
