Vegan No-Bake Peanut Butter Energy Balls Recipe

On-the-Go or Post-Workout snacks have never been easier!

These vegan no-bake peanut butter nibbles are an excellent addition to any active individual’s life. They also only take a few minutes to make, so it’s a win-win all around!

The Recipe

Time allotment

Total Time: 10 minutes

Yield: 15 no-bake peanut butter and date energy balls (vegan and gluten free)

Cooking Utensils

  • Bowl

  • Blender

  • Measuring cups + spoons

Ingredients

  • 1/2 cup (120g) smooth peanut butter

  • 1/2 cup (45 g) oats

  • 1/2 cup (87.5g) pitted dates

  • 1 tbsp maple syrup

  • 1/4 tsp salt

  • (Optional Toppings) 1/4 cup coconut flakes, 1/4 cup chocolate chips,


Instructions

  1. In a bowl, add 1/2 cup (120g) smooth peanut butter, 1/2 cup (45g) oats, and 1/2 cup (87.5g) pitted dates, 1 tbsp maple syrup, and 1/4 tsp salt

  2. Mix together

  3. Add in optional toppings (I like 1/4 cup chocolate chips)

  4. Take out small sized portions of dough, and roll them together between your palms, making a ball

  5. Place on a plate, and allow a few minutes for balls to solidify

  6. Enjoy!
